The pratfalls of cooking for one

Go to the market and buy:

  • 1 small head of red cabbage
  • 1 small head of green cabbage
  • 2 large carrots
  • 3 bell peppers
  • 3 red peppers
  • Green onions
  • Fresh basil
  • Fresh mint
  • 1 tube (chunk?) of veg ham
  • 1 can of coconut cream
  • ¾ cup cashews
  • 1 jar of jackfruit soaked in brine
  • 2 packages of fried tofu
  • 3 cucumbers

Shred it all using a food processor and rinse the vegetables until the water is clear. Find yourself with an ungodly amount of slaw. Prepare a simple dressing with vegenaise, mint extract, fresh mint chopped, and juice of one lemon. Watch one half of the slaw suck up the dressing like the receiving end of a fisting session. Whisk apple cider vinegar and wasabi paste together and pour over the slaw. Look at the other half of the slaw mixture and decide it needs a warm ginger-apple dressing. Remember that you still have to prepare the jackfruit curry, summer rolls and a simple veg ham dish or the groceries will go bad. And you need another cup of coffee.
